Homemade Banoffee Pie

            A good friend of mine asked for this recipe, and just in time for my daughter’s 11th month birthday, I decided to make one and share the recipe to you all.
 
 
               What is a Banoffee Pie? It means banana and toffee (boiled condensed milk). This is a popular dessert which originated in United Kingdom and now a favorite pie by many, around the world.

Here’s the simplest way to do it:

1.         Chill the All-Purpose Cream first!

Crust: 1 cup crushed grahams, 50g or half a stick of butter, 3Tbsp sugar.
2.         Mix all together and press on an 8” spring form pan (I bought mine from MK store for P100). I just put a liner on the side so the filling won’t stick on the pan later on and the side of the cake will look neat once removed. Refrigerate for at least 10 minutes.

Filling: 1 small can (168mL) Condensed Milk, 4 pcs. Banana (Lakatan), 2packs (250mL) All-Purpose Cream, 2 tbsp Powdered Sugar, Chocolate of your choice and 1 envelope of unflavored gelatin, dissolved in 3 tbsp hot water.

3.         Pour the condensed milk into a non-stick pan over low heat, then stir continuously for 5-7 mins, or until you get the consistency of a caramel. Spread over the crust, and then chill for at least 10 mins.
 
4.        Place the sliced bananas and chocolates into the pan.
5.         In a separate bowl, put the chilled all-purpose cream and the powdered sugar; mix well with a spatula or whisk. And then, quickly blend the gelatin mixture (while hot).

6.         Pour the cream mixture over the pan. Decorate the top with some more chocolates and slices of bananas (it’s up to you). Chill again for at least 20mins or until ready to serve.

Makes 6 servings

*make sure you do not overcook the milk, or else you’ll get a “yema” not a toffee.
*you could get powdered sugar in small packs (100g) from the supermarket; you’ll only need    2 tbsp for this recipe, so don’t buy a box.

*it's best to chill the chocolate bars, so you could easily slice them using a knife.

  1. Daddy just got his spring form, tama ba? Hehe..He has yet to try baking cakes. He's concentrating with cookies and cupcakes for our son's baon. But I'll show this one to him para mapagpractisan na. haha!
